Notes involve physically holding and handling cash, so that rate differs from an electronic transfer where funds move bank to bank. For larger amounts a telegraphic transfer is usually the better value.

What documents do I need?

Identity verification and, depending on the amount and purpose, supporting documents such as a travel booking, a university invoice, or a supplier invoice.

Can I hold foreign currency instead of converting twice?
